Stuffing 1 Tbsp (15 mL) canola oil, divided 1 onion, finely chopped 2 stalks celery, finely chopped 2 cloves garlic, minced 1 cup (250 mL) 100% whole wheat panko crumbs, or 3 slices whole grain bread, cut into small cubes 1/2cup (125 mL). sodium-reduced chicken broth 1 Tbsp (15mL) finely chopped fresh rosemary 1/4 tsp (1 mL) ground sage 1/2 cup (125 mL) dried cranberries Pork Roast 2 lb ( 900 g) boneless rib end pork roast, excess fat trimmed 1 Tbsp (15 mL) balsamic vinegar 1 1/2 cups (375 mL) loosely packed baby spinach leaves Method
