By: Brittaney Berendsen, RD., P.H.Ec. Makes 10 to 12 mini round loaves.
Ingredients: 3 cups (750 mL) all purpose flour 1 tbsp (15 mL) sugar 2 1/4 tsp (11 mL) active dry yeast 1 cup (250 mL) warm water 3 tbsp (45 mL) olive oil Everything Bagel Seasoning: 2 tsp (10 mL) poppy seeds 1 tsp (5 mL) Chia seeds 2 tsp (10 mL) sesame seeds 2 tsp (10 mL) dried garlic flakes 2 tsp (10 mL) dried onion flakes 1 tsp (5 mL)coarse pink salt 1/2 tsp (2 mL) coarse ground pepper Directions: 1. Add yeast to warm water and stir to dissolve. Add flour, sugar, olive oil and water/ yeast mix to a stand mixer. Mix to combine/ knead for 6 to 8 minutes using a dough hook. Shape dough into a ball and place in a bowl greased with olive oil. Cover with a warm damp dish towel and allow dough to rise for 30 to 40 minutes. 2. While waiting for dough to rise, mix all ingredients for everything bagel seasoning in a bowl and set aside. Prepare a large baking sheet with foil and lightly grease with olive oil, set aside. 3. Once dough has doubled in size, knead out on a flat surface. Divide dough into 10 to 12 sections and shape into mini round loaves. Spread loves out on baking sheet and allow to rise for another 30 minutes. 4. Preheat oven to 400 F. Brush the tops of each roll/ mini loaf with olive oil and sprinkle with everything bagel seasoning. Place in oven and bake for 15 to 20 mins. Remove from oven and allow to cool slightly before enjoying!
